Stir-Fry Satay Rice
This spicy Malaysian fried rice recipe is a great meal when you’re time poor but don’t want to skimp on flavour. The combination of coconut, peanuts and fresh veggies is a real tropical treat. Try this Malaysian satay rice recipe whenever you’re in a rush. Serves 4 people in well under 30 minutes.

Ingredients
- 500g skinless chicken breast fillet, stir-fry strips
- 1 tablespoon reduced fat crunchy peanut butter
- 1 x 190g packet Continental® Satay Rice, Value Pack
- 1 cup water
- 1/4 cup reduce fat milk
- 11/2 cups snow peas
- 1 large red capsicum, chopped
- 2 tablespoons chopped coriander, optional
- ½ teaspoon natural coconut essence, optional
Directions
- Heat oil and cook chicken until lightly browned. Add peanut butter and water, bring to the boil.
- Add rice and coconut milk, cover and cook gently for 10 minutes, adding the snow peas and capsicum for the last few minutes of cooking. Stir well, replace lid and allow to stand for 2 minutes before serving.
- Sprinkle served with coriander.
- Hint: To make this fried rice recipe slightly different, substitute prawns for half of the chicken, and sprinkle with sliced spring onions.
