Creamy Chicken & Pumpkin Curry
A typical Indian chicken recipe is hot and spicy but not this kid-friendly curry. With just the right amount of spice to ensure the flavours of the Subcontinent a place at any dinner table, this mild chicken curry is fit for four in under 30 minutes, with peas, pumpkin and yoghurt stirred throughout.

Ingredients
- 2 teaspoons sunflower oil,
- 400g skinless chicken breast fillet,
- cubed, 2 cups diced pumpkin,
- 1 packet Continental® Creamy Chicken Curry Recipe Base,
- ¾ cup (190mL) milk,
- 1 cup (250mL) water,
- 1 cup frozen peas,
- 1 tablespoon toasted slivered almonds,
- ½ cup natural yoghurt,
- Rice for serving
Directions
- Heat oil in a large fry pan, add the chicken and pumpkin and brown for 1-2 minutes.
- Combine the Recipe Base with the milk and water and add the chicken bring to the boil. Reduce heat and simmer for 15 minutes, or until the chicken is cooked through and the pumpkin is tender. Stir through peas and heat through.
- Serve this easy chicken curry with a sprinkle of almonds, top with yoghurt and serve with rice.
