Cook-in-Bag Smoky BBQ Chicken
This Cook-in-Bag Chicken recipe combines smoky BBQ flavours with eggplant and broccolini to put a new spin on the classic roast chicken and three veg. Serve on a bed of steamed white rice. What’s exciting? The Cook-in-Bag method ensures all flavours are locked away and don’t escape during cooking.

Ingredients
- 4 chicken thigh chops (1kg),
- 1 packet Continental® Cook-in-Bag Smoky BBQ Chicken Recipe Base,
- 1 medium eggplant, sides trimmed and sliced in four lengthwise (250g),
- 1 cup long grain rice,
- 500g broccoli florets
Directions
- Preheat oven to 180°C fan forced.
- Place chicken and eggplant into roasting bag; add Recipe Base and close bag using included tie. Gently rotate bag to coat evenly.
- Place on an oven tray in a single layer. Pierce top of bag 4-5 times with a skewer to vent.
- Cook on centre rack of oven for 40-45 minutes or until cooked through. While chicken is cooking, cook rice and broccoli.
- Carefully cut bag open to avoid escaping steam, transfer chicken and eggplant to serving dish and pour over juices to flavour. Serve with rice and broccoli.
