Cook-in-Bag Easy Portuguese Chicken
Cook up the flavours of Portugal with this sweet, spicy baked chicken recipe, cooked in the bag to ensure perfection every time. Chicken recipes have never been easier, with this Latino chicken classic satisfying four people in just 10 minutes of preparation time and 35 minutes of cooking time. Simple.

Ingredients
- 4 chicken Maryland (1.5kg),
- 1/2 red capsicum, diced,
- 1 packet Continental® Cook-in-Bag Portuguese Chicken Recipe Base,
- 1 medium sweet potato (kumara)(400g),
- 200g each of snow peas,
- sugar snap peas, & broccolini
Directions
- Preheat oven to 180°C fan forced.
- Place chicken and capsicum into roasting bag; add Recipe Base and close bag using included tie. Gently rotate bag to coat evenly.
- Place on an oven tray in a single layer. Pierce top of bag 4-5 times with a skewer to vent.
- Cook on centre rack of oven for 40-45 minutes or until cooked through.
- Remove from oven, rest in bag for 15 minutes before serving.
- While chicken is cooking, steam or microwave sweet potato and mixed green vegetables.
- Carefully cut bag open to avoid escaping steam, transfer chicken to serving dish and pour over juices to flavour. Serve with sweet potatoes and mixed green vegetables
- Hint: This baked chicken recipe can be made crispy. Cut open the top of the bag after cooking, and put back in the over for a further 15 minutes.
