Chicken Skewers with BBQ Vegetables

Simple chicken recipes are always a good addition to any menu. And who can resist Moroccan flavours like parsley, capsicum and natural yogurt? This quick 15 minute chicken skewer recipe serves 4 people and with these moreish morsels on the table, your dinner spread will be fresh and healthy.

Ingredients

  • 2 skinless chicken breast fillets (400g), cubed
  • finely grated rind and juice of 1 lemon
  • 1 tablespoon chopped parsley
  • freshly ground black pepper
  • 1 red onion, cut into wedges
  • 1 zucchini, cut into 2 cm pieces
  • 1 red capsicum, quartered
  • 2 roma tomatoes, quartered
  • 1 packet Continental® Moroccan Spices Couscous
  • 1 cup (250ml) water
  • 2 teaspoons sunflower oil
  • ¼ cup torn parsley leaves, extra
  • ½ cup low fat natural yoghurt

Directions

  • Place chicken pieces onto skewers and sprinkle with the lemon zest, half of the lemon juice, chopped parsley and a little black pepper, marinate for 20 minutes.
  • Preheat barbecue or grill pan. Place chicken skewers and vegetables onto the grill, allow to brown and cook through.
  • Prepare the Couscous following packet instructions using the water and oil. Serve Couscous with chicken skewers, barbecued vegetables and sprinkle with extra parsley.
  • In a small bowl, combine the remaining lemon juice and chopped parsley with the yoghurt, season with a little black pepper and serve on the side.
