BBQ Thai Beef Salad

Ingredients
- 1 kg beef sirloin, whole and trimmed
- 1 packet Continental Simmer Soup French Onion
- 2 tablespoons salt-reduced soy sauce
- 3 teaspoon sesame oil
- 1 lime; zest and juice
- 1½ tablespoon fish sauce
- 4 teaspoons sugar
- 2 eschallots, sliced
- ½ red capsicum, sliced
- 3 carrots, cut into matchsticks or grated
- ¼ iceberg lettuce, shredded
- 1 punnet cherry tomatoes, halved
Directions
- Combine French Onion Simmer Soup Mix, soy sauce, 1 teaspoon sesame oil, lime zest, ½ tablespoon fish sauce and 2 teaspoons of sugar. , Marinate sirloin in this mixture for ½ hour minimum. Preheat the BBQ., Combine salad of shallots, capsicum, carrots, lettuce and tomatoes and set aside., To achieve a medium-cooked whole sirloin, BBQ for approximately 35 minutes, then set aside to rest for 10 minutes., To make the dressing, combine remaining fish sauce, lime juice, sesame oil and sugar. Toss with the salad and serve with thin slices of the sirloin.
